Rotini Pasta and Chicken

Here’s a recipe for a really quick and easy meal.  It combines chicken and pasta with the right combination of spices to make a great tasting dinner.  Whenever I am short on time, this is the meal I usually prepare for my family.  Clean up is quick too.

 

You will need:

3 boneless, skinless chicken breasts

1 stick of butter

¾ cup grated parmesan cheese

2 tsp. garlic salt (can add more to adjust to your taste)

¼ tsp. onion powder

3 to 4 tsp. oregano (I use 4, but start with 3 and adjust to your taste)

1 lb. pkg. rotini pasta noodles (springs)

 

Cook the chicken.  I just pull the chicken breasts right out of the freezer and put them in a glass baking dish, sprinkle them with a little garlic salt, cover with foil and bake at 375 F for about 45 minutes until cooked.  Then, I use a fork and knife to cut/shred into pieces.

Boil water and cook rotini as per package directions – cook al dente.  Drain and return to pot.

Add the stick of butter to the hot pasta and mix till melted.

Add the shredded chicken, grated cheese, and the spices.  Mix thoroughly.

Give it a quick taste and add more spice if necessary.

Spoon into bowls and serve.  Enjoy!
