Heavenly Bars

I got this recipe from my friend Francie.  She made these bars for her son’s graduation party.  They are so good – “heavenly” you might say.  They are also very rich, so you need to cut them into very small servings.  I made them the other day, and put them in mini baking cups.  That makes it look really nice when serving it to company.  This one recipe goes a long way, because you really can only eat a small amount.

I made my batch in a 13×9 pan and got a little thicker bar.  You could also use a jelly roll pan.  Either way, I know this will definitely satisfy your sweet tooth.

 

You will need:

2 cups peanut butter

2 cups brown sugar

1 cup white corn syrup

1 pkg.(3.4 oz.) instant vanilla pudding mix

4 cups Rice Krispies

4 cups powdered sugar

½ cup butter, softened

1/3 cup milk

1 (12 oz.) pkg. milk chocolate chips

6 TBSP butter

 

Melt together peanut butter, brown sugar and corn syrup.  Remove from heat.

Add ½ pudding mix and the Rice Krispies and press into a 13×9 pan sprayed with cooking spray (or a jelly roll pan).  I used a flat spatula sprayed with cooking spray to press the mixture evenly into the pan.

Mix the powdered sugar, the other ½ of the pudding mix, butter and milk.  (add the milk slowly)  The filling will not get any thicker as it sets.

Spread this layer over the first layer. 

Chill in the refrigerator while you prepare the chocolate layer.

Melt the chips and the butter, and mix thoroughly.

Spread the chocolate mixture over the second layer.

Chill, and cut into small pieces.  Enjoy!
