Aunt Eunice’s Anchovy Dip – A Tasty Appetizer

I’ve been telling you about our Michigan Vacation and how my aunt and uncle had us over to their house on several occasions for delicious meals.  One day my Aunt Eunice had various snacks and appetizers for us to munch on.  She made this dip that my husband and daughter really liked, so I asked her for the recipe.  Today I am going to share it with you.  Try it and let me know what you think and if you have any tasty appetizers, I hope you will share them with us.

You will need:

8 oz. package of cream cheese, softened  (She uses Philadelphia Cream Cheese.)

16 TBSP Butter, softened

1 ½ TBSP Anchovy Paste (She uses Reese Anchovy Paste.)

2 ½ tsp. Capers

1 ½ tsp. Caraway Seed

2 ½ tsp. Paprika

Chopped onion or chives, optional  (Although her original recipe calls for this, she didn’t use this in her recipe this time.)

Mix all ingredients together until well combined.

Refrigerate for at least one hour.

Set out at room temperature before serving (so it’s easier to spread).

Serve with crackers.

Enjoy!
