Stuffed Jalapeno Peppers

My sister-in-law made these for our Christmas Eve Party.  They are so good; everyone loved them, and they were gone really quickly.  Sorry, I forgot to take a picture for you, but you must try these.  Here’s the recipe she gave me.  She said they are really easy to make, but you should take care when cleaning the jalapeno peppers.  She recommends using gloves or else your fingers will be burning, and please don’t touch your face with any pepper juice on your hands.  (Note:  I read somewhere that if you stick your hands in milk or sour cream, it will help stop the burning much better than just rinsing under water.  Can’t say I’ve tried that, but that’s what I read somewhere.)  Best to opt for the gloves I think.  Anyway, here’s the recipe:

 

You will need:

1 pound of Jimmy Dean’s Pork Sausage

8 oz. cream cheese

1 cup of shredded parmesan cheese

1 pound of jalapeno peppers

Cut the jalapeno peppers in half, long ways, so you end up with 2 boat-like shapes.  Remove the stems and seeds (you can use a spoon to scoop the seeds out), and wash the peppers.  (Remember to use gloves.)

Brown the pork sausage, making sure it is broken up into small pieces.

Add in the cream cheese and shredded parmesan cheese, and mix well.

Spoon the mixture into each jalapeno half (boat shape shell).

Place them in a baking dish.

Bake in a pre-heated oven at 400 F for approximately 20 minutes, until the cheese melts and is just starting to turn golden brown.
