Banana Bread with Cinnamon Sugar Topping

My family really likes this banana bread.  It is very tasty and makes the whole house smell good while it is baking.  I made some last night and when my husband came home he said, “What are you making that smells so good?”  I think it is the combination of the banana and sweet cinnamon sugar topping baking that creates such a wonderful aroma.  So, if you have some over ripe bananas sitting on your kitchen counter, give this recipe a try; I think you will like it.  (This recipe makes two loaves.)

 

You will need:

6 TBSP butter, softened

1 ½ cups white sugar

1 egg

3 large very ripe bananas, mashed

8 oz. container sour cream

1 tsp. vanilla

1 tsp. ground cinnamon

¼ tsp. salt

1 ½ tsp. baking soda

2 ¼ cups all-purpose flour

 

For the topping:

2 TBSP white sugar

½ tsp. ground cinnamon

 

Preheat oven to 325 F. and spray two 8 x 5 inch loaf pans with cooking spray.

In a large bowl, cream the butter and sugar.  Mix in the egg, mashed bananas, sour cream, vanilla and cinnamon.

Mix in the salt, baking soda, and flour.

Divide the mixture evenly into the two prepared pans.

In a small bowl, stir together the sugar and cinnamon for the topping.

Sprinkle evenly over the two pans of batter.

Bake for approximately 45 minutes, until a toothpick inserted in the center comes out clean.
