Asparagus with Tomato and Red Onion – Healthy and Delicious!

Here’s a really quick side dish that is healthy and delicious. I got the idea from my sister Michelle. When she made it, she used the frozen asparagus spears in a bag that you just steam in the microwave. I also used this type of asparagus, but I didn’t steam them; I just ran them under cold water to defrost them and then patted them dry. You could also use fresh cooked asparagus. I served this as a side dish on Mother’s Day along with the steaks we grilled outside. It looked very pretty on the table and was very tasty!

You will need:

Asparagus spears, cooked and firm

Fresh tomatoes, sliced

Red Onion, sliced

Extra Virgin Olive Oil

Balsamic Vinegar

Black Pepper

Garlic Salt

Arrange the asparagus spears on a platter. Top with fresh sliced tomatoes and red onion. Sprinkle with black pepper and garlic salt, to taste. Drizzle with olive oil and balsamic vinegar.
